Coconut Macadamia Nut Mayonnaise
 
     Well, I don't know about you, but I love mayonnaise in my egg salad, tuna salad, and maybe about a hundred other things.  The problem is when I tossed out my seed oils, my mayonnaise went out with them.  Fortunately many years ago I bought myself a Bamix handheld blender.  With it I can make homemade mayonnaise in about 20 seconds.  You can also do this in a stationary blender, but it takes a couple more minutes.  So quick as you please you can whip up a healthy mayonnaise made from healthy oils.  I just finished making up a mayonnaise from coconut oil and macadamia nut oil.  Both of these oils are just oozing with goodness and heart healthiness.  However the basic recipe can be used with any good oil.  Olive oil can be used although its natural flavor is rather strong so I would suggest using a light olive oil or a mixture of oils.  The coconut macadamia nut oil blend produces something more like margarine when at refrigerator temperature.  For a mayonnaise that is more traditional I would use just the macadamia nut oil alone or mixed with other less solid oils like almond, walnut, avocado, or olive.
     Using a handheld blender it is critical that all the ingredients be at room temperature - not cold and not warm.  This means when using coconut oil that you have to raise its temperature just until it starts to melt (76 degrees).  If you are too warm the oil will not form an emulsion properly and will stay a liquid (I know this because I did this).  So here we go.

    1 egg + 1 yolk
    1 TBS Lemon juice
    1 TBS Rice or other Vinegar
    1 tsp. dry mustard
    ½ tsp. sea salt
    11/4 cup oil
with this recipe I used half coconut oil and half macadamia nut oil.

When using a hand held blender: put all the ingredients into a 1 pint Mason jar or similar size container.  Using the blending blade just hold the blade at the bottom of the jar and blend for 12 seconds then slowly raise the blender to incorporate the rest of the oil into the mix.  That's it.

When using a stationary blender put all the ingredients into the bottom of the blender container and start blending.  Slowly drizzle the oil into the blending mix until all the oil is incorporated.  That's it.

You can easily play with the flavor of the mayonnaise by adding different ingredients, like a little sweetener for a miracle whip flavor, or some ketchup and pickle relish for a thousand island dressing.  I made up a Caesar salad dressing by adding fish sauce, Worcestershire sauce, garlic paste, extra vinegar, and sheep parmesan cheese...delicious.
