  Our goal has been to eat 2-3 pounds of vegetables each day.  One big 3-4 cup bowl of this soup in the morning goes a long way toward reaching that goal.  It really helps when you can make your vegetables this delicious.
 
     8 medium yellow crookneck
        squash cut up.
     1 carrot peeled and
         chopped
     1 cup coconut milk
     1 sweet onion chopped

 
     2 Tbs. Organic Chicken
     Broth base (Better than
     Bouillon brand)
     1/2 cup water
     2 Tbs Fish Sauce
     1 Tbs Dr Dave Double sugar
     2 tsp Cardamom
 
Place the ingredients in a pan on the stove and lightly cook to tenderize the vegetables.  Then place everything into a blender and blend it down to the consistency you prefer.  Serve topped with one or two pats of butter.  Makes 8 cups.
