What do you do when you have got one of those favorite holiday dishes that is straight out of 1959 – you know the ones – cardiac arrest in a bowl – a combination of every deadly “food source” ever created. One of my patient’s – Catherine – gave just such a recipe to try this holiday. This baby is made with a full bag of marshmallows, mayonnaise, cream cheese, whipped cream, 2 flavors of sugar filled Jell-O, canned crushed pineapple, and raspberries. I remember this recipe (or something very similar) gracing our holiday table in my Mom’s new Tupperware when I was a kid.
What do you do if you want the good old days without the cardiac arrest? Adapt and get creative. You swap out the marshmallows by making your own sugar free marshmallow cream. You swap out the mayonnaise with a light canola mayonnaise or even better a grapeseed oil mayonnaise. Use a goat cheese log for the cream cheese, coconut milk for the cream, and good old Knox gelatin for the Jell-O. It is still best to use the canned pineapple as fresh pineapple will dissolve the gelatin because of the active pineapple papain enzymes in the fresh (although if you really had nothing but time you could crush fresh pineapple and cook it to destroy the enzymes). Fresh or frozen raspberries we can probably keep just as is.
1 1/2 cups water
1 cup 2X erythritol/ stevia blend
2 envelopes unflavored gelatin
1 teaspoon vanilla
1/4 teaspoon salt
2 more packages Knox gelatin
1 tsp lemon flavoring
1 tsp Raspberry flavoring
2 cups water
8 oz soft goat cheese
½ cup light or grapeseed mayonnaise
1 cup coconut milk
1 large can crushed pineapple
24 oz raspberries – fresh or frozen
Step 1
Soften 1 package gelatin by soaking in ¼ cup cold water for a few minutes. Then dissolve in ¾ cup boiling water. Add ¼ cup Dr. Dave’s Sugar (erythritol – stevia blend) and 1 tsp lemon flavoring. Set aside for a bit.
Step 2
Mix 1 ½ cups water with ½ cup erythritol/stevia blend and salt in a saucepan. Cook till it boils to make a syrup then set aside. Add vanilla.
Step 3
Put 2 packages of gelatin into a deep bowl and add the syrup you just made.
Step 4
Beat with an electric mixer for 12 minutes until very thick and
tripled in size. It may take longer - the foam should form soft
peaks. Set aside momentarily.
Step 5
In a big bowl blend together with a mixer the goat cheese, mayonnaise, coconut milk, and pineapple. When well blended add in the lemon gelatin mixture then fold in the foamy marshmallow cream mixture. Pour mixture into a 9x15 pyrex casserole pan and put into the refrigerator to cool.
Step 6
Soften the last package of gelatin in ¼ cup cold water then dissolve in ¾ cup boiling water. Mix in ¼ cup Dr. Dave’s Sugar and raspberry flavoring (if you can’t find raspberry flavoring then crush 6 oz of the whole raspberries and add that instead.) Add the whole raspberries and let mixture cool at room temperature.
Step 7
The pan in the fridge will be cooling faster than the raspberry gelatin mixture. When it gets almost set, then pour the raspberry mixture over the top of the lemon mixture. Cover the pan and return it to the fridge to fully set up.
