Holiday Sweet Potato Cranberry Nut loaf
(or Yam, or Zucchini, or Pumpkin, or Banana)

     There is nothing like a slice of a nice sweet quick bread at the holidays.  This basic recipe can be used with a variety of vegetable or starchy fruit flavor ingredients.  For the lowest carb version use the zucchini.  

  8 Large eggs
  ½ cup melted butter or coconut oil
  ½ cup mashed cooked sweet potato, yam, zucchini, pumpkin, or banana
  ¼ cup unsweetened apple sauce
  ¼ cup erythritol or xylitol
  ¼ cup molasses
  ¼ cup raw honey
  1 tsp. Stevia
  1 tsp. Vanilla
  1 tsp. Cinnamon
  ½ tsp. mace
  ½ tsp. Salt
Mix all these together in a large bowl until smooth.
Add:
  ¾ cup sifted coconut flour and
  1 tsp. Baking soda
Mix well then add:
  ¼ cup slivered almonds, or pecans, or walnuts
  ½ cup dried cranberries
     Stir in until blended and scrape into a greased 9x5x3 baking pan.
Bake at 350 degrees for 1 hour.
     Let cool 10 minutes then remove from pan and cool at least 1 hour more.
I didn't wait and cut off a slice right away - what a crumbly mess...better to let it cool a bit so it will cut nicely.  This makes a wonderful and healthy Christmas treat - low in carbohydrates and sugars.
