Low Sugar Almond Chocolate Chip Cookies

    * 4 whole Eggs
    * 1 cup Almond Butter
    * 1/2 cup Honey    
    * 2-3 teaspoons Stevia or 1 cup Dr. Dave’s Double sugar
    * 1/2 teaspoon Salt
    * 1/2 teaspoon Vanilla
    *1/2 teaspoon Almond extract
    * 1 cup high coco mass chocolate chips      
    * 2/3 cup Coconut Flour or 1 cup Almond Flour

1. Mix the first 7 ingredients  in a large bowl and then mix well.

2. Sift in the coconut flour and  mix well, then add the chocolate chips.

3. if you like you may add some chopped dried fruit or slivered almonds for a different flavor.

4. Spoon mounds onto a cookie sheet and bake at 375 degrees for 12 to 15 minutes.

I invented this recipe as an alternative to peanut butter cookies as many people are sensitive to peanuts.  It is high in fiber and protein and has of only small amounts sugar, making it much healthier than most cookies.
