Quichizza


 

      My son and his girlfriend stopped over for the night a couple weekends ago.  I decided to make up a breakfast, but was a bit stuck since I was doing no carbs and he does not like scrambled or fried eggs.  The other complication is that somehow I ended up with a very traditional son (probably a reaction against my Bohemian hippie ways.)  So none of my odd breakfast foods like vegetable soup would fly.  First I thought of what I would like as a breakfast treat – quiche.  But he probably would not like what I put in it.  So I racked my brain and came up with the most traditional 20 something breakfast food there is – pizza.  So how do I do that without any carbs?.. something breakfasty… how about a quiche pizza?  Awesome!


In the blender whip up:
10 eggs
¼ cup coconut milk
½ cup flax meal
½ tsp. Sea Salt
½ tsp. black pepper (optional)
¼ cup ghee
Add
1 can pitted olives - drained
½ cup cooked mushrooms


Pulse the blender a couple times to chop up the olives and mushrooms
Pour the mixture into a greased 9x13 glass baking pan
Sprinkle the top with cooked crumbled bacon
Put into a 350 degree oven for 10 minutes
Grate 1 cup of Nut Cheese
Pull out the Quichizza and crumble the cheese over the top
Over the cheese place a layer of Pepperoni and
Put back in the oven for another 10-15 minutes – it will get all puffed up like a soufflé, but will collapse down to a traditional pizza appearance as it cools a bit.

Serve piping hot

I am sure he would have preferred pancakes with Log Cabin Syrup, but tough.  I need to eat also and no carbs is the rule of the day right now.  When I told him we were having Quichizza, he asked if that was some hippie ethnic food.  The fact that it tasted like pizza made the invention go over without any complaints.
